Farm to School Local Foods Recipes

Artesian Spring Chicken Salad

Prep/Total Time: 10 minutes

Ingredients:
  • 3 cups chopped leftover Roasted Chicken
  • 1 cup chopped fresh apples, pears, and/or grapes
  • 1 cup chopped crunchy fresh veggies such as celery and radishes
  • ½ cup dried cranberries 
  • ½ cup chopped cilantro
  • ½ cup mayo
  • Salt and pepper to taste
  • Whole wheat bread 
  • Lettuce (optional)

Directions:
Core and chop apples.  Wash and chop celery and cilantro.  
Mix together chicken, apples, celery, dried cranberries, cilantro, and mayo.  Season with salt and pepper to taste.  
Serve with whole wheat bread or toast and lettuce (optional).
